Luc Gilbert, Executive Chef

Mr. Gilbert has learned to be a cook in his native region, or Abitibi-Témiscamingue. Subsequently, he settled in the Laurentians where he worked and gained his experience in several renowned institutions in the region. Among these include the Hotel Far Hills ins, Hotel La Sapinière, L'Auberge du Lac Morencie, L'Eau à la Bouche restaurant and Bistro à Champlain. During these years, Luc Gilbert has worked with many leaders and friends who influenced his style and enriched his experience.

Through various experiences and challenges faced over time, Mr. Gilbert is always determined to do what he loves in cooking, wich is a simple and unpretentious cuisine with the best products available on the market.

Marie-Christine Rheaume, Sous-Chef

Marie-Christine has always been a fine gourmet and a curious woman. After a college degree in Art and Letters, she studied cooking and discovered her true passion. Her taste for adventure led her to travel to different countries and across Canada. It was almost by chance that she found herself in the Magdalen Islands for the first time in 2004. The charm of this region which has so much to offer immediately seduced her. She made several trips in the archipelago before she decided to stay for a little longer in 2008. Fascinated by the diversity of the products and the generosity of the terroir, she decided to write the book Le livre Gourmand des Îles de la Madeleine in collaboration with her sister and her spouse. This book, published by Éditions de la Morue Verte in the summer of 2010, pays tribute to the local producers and artisans of the table.

Returned to the "main land" since 2010, she found in the Laurentians the scenic beauty and open spaces that she likes so much. Although, she still retains the same passion for fresh products and Quebec terroir that she wants to integrate as much as possible to her culinary creations at Le Champagne au Balmoral.
